12 Days of Baking: Orange Cranberry Bread

Today's recipe is a simple, yet delicious Orange Cranberry Bread that is sure to become a new holiday favorite! This bread is loaded with flavor thanks to the sweetness of the orange glaze and the tartness of the cranberries. This recipe is perfect for breakfast on Christmas morning or can even be served as a dessert!

Ingredients for the Bread

  • 1 cup sugar
  • 2 tsp orange zest
  • 1 tsp vanilla extract
  • 2 tsp almond extract
  • 1.5 cups Fairhaven Mill Organic All Purpose White Flour
  • 1 tsp baking powder
  • 2 eggs
  • 1/2 cup unsalted butter, melted
  • 3/4 cup buttermilk
  • 1 tbsp orange juice
  • 1 cup cranberries, chopped

Ingredients for the Glaze

  • 1 cup powdered sugar
  • 1.5 tbsp orange juice
  • 1 tsp orange zest

Instructions:

  • In a large mixing bowl, mix together sugar, orange zest, vanilla extract, almond extract flour, and baking powder until roughly combined.
  • In a medium mixing bowl, add eggs, butter, buttermilk, orange juice and mix until smooth.
  • Combine the wet mixture into the dry mixture and mix until just combined. Don't over-mix.
  • Gently stir in the chopped cranberries until evenly distributed.
  • Pour batter into a greased 9x5 loaf pan & bake at 350° F for 1 hour and 10 minutes. Check to see if bread is done by inserting a toothpick in the center and look to see if it comes out clean. If the top starts to brown too quickly, you can cover the bread with aluminum foil for the last 10 minutes.
  • Remove from oven and let it cool for 30 minutes. 
  • While the bread is cooling, mix together powdered sugar, orange juice, and orange zest until smooth.
  • Gently remove the bread from the pan by running a knife along the edges of the pan and then turn it upside down onto a serving dish.
  • Drizzle the glaze over the bread and let the glaze set for about 15 minutes.
  • Cut the bread into slices and enjoy!
