This sweet potato spice cake is the ultimate winter comfort food. It’s perfectly spiced with cinnamon, nutmeg, and cloves, and the sweet potatoes make it so moist and flavorful. Ingredients:
- 2 cups (227g) Fairhaven Mill Organic 100% Whole Grain Pastry Flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/tsp salt
- 1 tsp cinnamon
- 1/2 tsp cloves
- 1/4 tsp nutmeg
- 1/2 cup (1 stick) unsalted butter
- 1 cup (230g) cane sugar
- 3 eggs
- 1 tsp vanilla extract
- 1 cup (270g) sweet potatoes (canned or cooked/mashed sweet potato)
Instructions

Preheat the oven to 350 °. Grease a 9x5 inch loaf pan.

In a bowl, mix/whisk all the dry ingredients together.

In a separate bowl, whisk the sweet potatoes and eggs together until they’re blended.

In a stand mixer, cream the butter and sugar until light and fluffy.

Add the vanilla and ⅓ of the sweet potato/egg mixture.

Take turns in adding the dry mix and rest of the sweet potato/egg mixture.

Mix until no dry lumps of flour.

Pour the batter into the greased pan and bake for 1 hour +.

Insert a knife in the bread to see if it’s ready. If it's wet, bake for longer and check again. If it's clean, it’s done!
