12 Days of Baking: Garlic Bread Wreath with Baked Brie

If you like baked brie, you are going to love today's recipe! Not only is this a delicious appetizer, but it can also double as a centerpiece for any holiday party. This recipe features a delicious garlic bread wreath with a creamy baked brie center for dipping.  

Ingredients for the Pizza Dough

  • 2 1/4 teaspoons instant yeast or active dry yeast (1 packet)
  • 1 tsp sugar
  • 1 1/2 tsp coarse sea salt
  • 1 cup lukewarm water (about 110°F or 43°C)
  • 3 tbsp extra virgin olive oil, divided
  • 3 Cups (or 380 grams) Fairhaven Mill Organic 00 Pizza Flour

Ingredients for the Baked Brie

  • 8 oz brie cheese wheel
  • 6 tbsp melted butter
  • 3-4 cloves of garlic, finely chopped
  • Parsley, finely chopped
  • Rosemary, finely chopped

Directions for the Pizza Dough

  1. In a large bowl, combine the yeast, sugar, salt, lukewarm water, and 2 tbsp of extra virgin olive oil. Add the flour and use your hands to incorporate it all together. Knead for about 2-3 minutes until ingredients are fully combined.
  2. Place on floured countertop and knead for 30 seconds. If the dough feels too sticky, add a small amount of flour until dough is smooth and elastic. 
  3. Grease a large bowl with extra virgin olive oil and place dough in the bowl. Cover with a clean kitchen towel and let it sit for 1 to 2 hours. Dough should rise into a dome shape and become very puffy.
  4. Grease another large bowl, with a small amount of extra virgin olive oil. Divide dough into two pieces and shape each piece into a ball. Let it sit for an additional 30 minutes to an hour.

Directions for the Wreath Assembly

  1. Lay parchment paper down on a baking sheet.
  2. Score the top of the brie and place in the center of the baking sheet.
  3. Roll pizza dough into 1.5" balls and place evenly around the brie cheese wheel.
  4. Melt butter and add finely chopped garlic. Brush half of the mixture over the brie & pizza dough balls.
  5. Top with finely chopped parsley and rosemary
  6. Bake at 425° until pizza dough balls are golden brown, approximately 15-20 minutes
  7. Brush the additional butter & garlic mixture over everything & garnish with rosemary sprigs
  8. Serve warm & enjoy!
