Ingredients for the Pizza Dough
- 2 1/4 teaspoons instant yeast or active dry yeast (1 packet)
- 1 tsp sugar
- 1 1/2 tsp coarse sea salt
- 1 cup lukewarm water (about 110°F or 43°C)
- 3 tbsp extra virgin olive oil, divided
- 3 Cups (or 380 grams) Fairhaven Mill Organic 00 Pizza Flour
Ingredients for the Baked Brie
- 8 oz brie cheese wheel
- 6 tbsp melted butter
- 3-4 cloves of garlic, finely chopped
- Parsley, finely chopped
- Rosemary, finely chopped
Directions for the Pizza Dough
- In a large bowl, combine the yeast, sugar, salt, lukewarm water, and 2 tbsp of extra virgin olive oil. Add the flour and use your hands to incorporate it all together. Knead for about 2-3 minutes until ingredients are fully combined.
- Place on floured countertop and knead for 30 seconds. If the dough feels too sticky, add a small amount of flour until dough is smooth and elastic.
- Grease a large bowl with extra virgin olive oil and place dough in the bowl. Cover with a clean kitchen towel and let it sit for 1 to 2 hours. Dough should rise into a dome shape and become very puffy.
- Grease another large bowl, with a small amount of extra virgin olive oil. Divide dough into two pieces and shape each piece into a ball. Let it sit for an additional 30 minutes to an hour.
Directions for the Wreath Assembly
- Lay parchment paper down on a baking sheet.
- Score the top of the brie and place in the center of the baking sheet.
- Roll pizza dough into 1.5" balls and place evenly around the brie cheese wheel.
- Melt butter and add finely chopped garlic. Brush half of the mixture over the brie & pizza dough balls.
- Top with finely chopped parsley and rosemary
- Bake at 425° until pizza dough balls are golden brown, approximately 15-20 minutes
- Brush the additional butter & garlic mixture over everything & garnish with rosemary sprigs
- Serve warm & enjoy!
