Low Sodium Chicken Broth |Ā 4 cups

DRESSING
Fresh Orange Juice |Ā 1/2 cup (from 2 oranges)
Extra Virgin Olive Oil |Ā 1/3 cup
Orange Zest |Ā 2 tbsp (from 1 orange)
Agave NectarĀ |Ā 2 tbsp
Fresh Mint Leaves |Ā 1/4 cup, finely chopped
Kosher SaltĀ |Ā 1 tsp
Freshly Ground PepperĀ |Ā 1/2 tsp
StrawberriesĀ |Ā 10, quartered
BlueberriesĀ |Ā 1/2 cup
Red OnionĀ |Ā 1/3 cup
Crumbled Goat CheeseĀ |Ā 1/3 cup

WHEAT BERRIES
- In a large saucepan, combine the wheat berries, chicken broth, water, and salt.
- Bring to a boil over high heat.
- Reduce the heat to a simmer, cover the pot & cook until tender - about 60 to 70 minutes.
- Drain the wheat berries and set aside to cool - about 15 minutes
- Transfer to a large salad bowl
DRESSING
- In a medium bowl, combine the orange juice, olive oil, orange zest, agave nectar, mint leaves, salt, & pepper and stir until smooth.
- Pour the dressing over the wheat berries.
- Add the strawberries, blueberries, red onion, & goat cheese.
- Toss until all ingredients are coated
