Apple Fritter Loaf Cake

Today's recipe was baked by our Customer Experience Specialist, Alyssa, who was inspired by Miss in the Kitchen's Apple Fritter Cake recipe! This Apple Fritter Loaf Cake can be served as a dessert or can be served as a sweet treat for breakfast!

Ingredients:

For the Cinnamon Sugar:

  • 1/3 cup light brown sugar, packed

  • 2 tsp ground cinnamon

For the Cake:

For the Apples:

  • 3 tbsp granulated sugar

  • 1 1/2 tsp ground cinnamon

  • 1 3/4 cups apples, peeled & chopped

For the Icing:

  • 1/2 cup powdered sugar

  • 2 tsp cream or milk

Instructions:

For the Cinnamon Sugar:

  1. In a small bowl, combine the cinnamon and brown sugar and set aside. 

For the Cake:

  1. In a large bowl, using an electric mixer on medium speed, cream the sugar and butter together until light and fluffy.
  2. Beat in the vanilla,
  3. then add the eggs, one at a time, beating just until each egg is incorporated. Scrape down the sides and bottom of the bowl. 
  4. In a medium bowl, combine the flour, baking powder, baking soda, and salt.
  5. On medium speed, mix the dry ingredients and buttermilk to the butter-sugar mixture in the large bowl. Alternate back and forth between the dry ingredients and the buttermilk. 
  6. Scrape down the sides and bottom of the bowl with a spatula and stir in any unmixed bits of batter. 

For the Apples:

  1. In a medium bowl, combine the sugar and cinnamon.
  2. Add the apples and toss until the apples are fully coated with the cinnamon sugar.

For the Icing:

  1. After the cake has been taken out of the oven, mix powdered sugar and cream together in a small bowl until smooth.

Putting it All Together:

  1. Preheat the oven to 350° F.
  2. In a greased 9 x 5 inch loaf pan, add half of the batter. Add half of the apples in a layer and gently push them down into the batter and sprinkle half of the cinnamon sugar over the apples. 
  3. Repeat, adding the remaining batter, apples, and cinnamon sugar. Use a skewer to swirl it all together.
  4. Bake for 60 to 65 minutes or until a toothpick inserted into the center comes out clean.
  5. Place cake on a serving platter and drizzle warm cake with icing.
  6. Slice and serve warm.
