Coconut and Walnut Oatmeal Chocolate Chip Cookies

Today's recipe for Coconut & Walnut Oatmeal Chocolate Chip Cookies comes from our Production Manager, Jen! Packed with the goodness of shredded coconut, crunchy walnuts, wholesome oats, and gooey chocolate chips, these cookies are full of flavors and textures! Be sure to add this to your dessert menu for your upcoming holiday gatherings!


  • 1¼ c Fairhaven Mill Organic  All Purpose White Flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ tsp cinnamon
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • ½ cup unsalted butter, room temperature
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 cup quick oats
  • 1 cup shredded sweetened coconut
  • 1 cup milk chocolate chips (extra dash for luck)
  • 1 cup chopped walnuts


  1. Preheat oven to 350° F
  2. In a large bowl, mix flour, baking soda, baking powder, salt and cinnamon with a whisk and set aside.
  3. In a separate bowl, mix sugars and butter until creamed together with a hand mixer or stand mixer.
  4. Add egg and vanilla, mix.
  5. Gradually add dry mixture to creamed mixture until incorporated then add remaining ingredients, mix. Do not over mix.
  6. Bake for 8-10 minutes. 
  7. Enjoy!
