Zucchini & Cheddar Cornbread Muffins

This month we're sharing a recipe for delicious Zucchini & Cheddar Cornbread Muffins! With summer coming to an end, this is the perfect recipe to use up those zucchinis growing in your garden. They're versatile enough to eat for breakfast, lunch, or dinner, and of course they're also great for snacking!

Gluten Free Zucchini & Cheddar Cornbread Muffins INGREDIENTS  2 eggs 7 tbs (100g) melted butter 1 1/2 cup buttermilk 1 1/3 cup Fairhaven Mill Yellow Cornmeal 2/3 cups GF Flour (Fairhaven Mill Oat Flour is best) 4 tbsp + 1 tsp sugar 2 tsp baking powder 1/2 tsp baking soda 3 t salt 250 g finely shredded zucchini Approx. 1.5 cup shredded  cheddar for topping  METHOD  1. Beat the eggs in a bowl, pour in melted butter and buttermilk  2. Mix in the dry ingredients in a separate bowl and combine with the buttermilk mixture until smooth.  3. Add zucchini to the mixture.  4. Spray the muffin pan and pour batter into the pan. Sprinkle cheddar on top (you can put a small amount of cheddar inside the muffin cup as well)  5. Bake at 350F for 7 minutes, rotate, bake for 5 more minutes. Check with a toothpick to ensure it comes out of the muffin clean.  6. Cool on cooling racks before serving.  7. Enjoy!
